Experience sending/receiving, creating, and collaborating on content, so they don't fall back to consumer device driven teaching. Also encourage they get/bring their own device, or have one available. I ran a 20 person iPad workshop for Government earlier this year, 1 person brought a Tablet, and no I'm not joking! So device in hands as mentioned earlier a must.
I think one of the most important things is to go through how to navigate the App Store & download new apps.
Set an activity where everyone goes and grabs a free app from the top 50 list (or education category), plays with it for 10 minutes, and then do a quick 1min lightning round-table with what people downloaded and what they think of the app.
If people are comfortable with that, then they'll be more inclined to explore & try new apps in future.
To cover something that hasn't been dealt with so far: defining and explaining the "sync" concept and iCloud. I have heard so many users (education or not) complain about having trouble with this - from never having backed up, and thus losing everything when their phone/pad packs it in, through to those who lose their device and haven't set up Find my iPhone, through to those who don't realise that they can set up their PC to maintain consistent content. Understanding what SYNC means, and how to do it, is a lifesaver!
