Dave I've faced a similar dilemma lately. Though I have enough skills in order to be fairly proficient in building an application in Django/Rails, it would require a couple of months of full hard work. That's just simply not enough time to do both Product Design / Marketing + Development. It's really one or the other.
Though I'm not of the perspective that we need technical co-founders, or that engineers need design co-founders. Start small, make some money, hire a developer, and grow.
I see what you're saying. That's difficult. It's very tough to find that 'technical co-founder' though I'm starting to get tired of that idea (literarily).
But in any case this is coming down to raising funds to hire talent. And raising funds in my eyes now doesn't have to be directly related to the startup, but maybe to just augment the business model. Something that doesn't require the Mac OSX part of it that can generate some income or interest. I'd like to initially avoid investors...
That being said, I'd love to have a partner, rather than an employee any day of the week.
