Cart racing games have a clear path toward dynamic difficulty adjustment: speed/acceleration adjustment, and powerup probability. Everyone seems to complain about these though, since they're very noticeable, and if they're visible enough you feel as though you have lost control.
This article points out that one game, Split/Second, would have been totally broken without extreme rubber banding (the post he references analyzing Mario Kart: Double Dash is also very good).
